A very approachable washed field blend (Caturra, Castillo, Colombia) with organic credentials. We get a classic Colombian profile of cooked fruits and sweet butterscotch, with light cocoa undertones throughout.

Perla De Inza

Description

Perla De Inza is delightfully sweet coffee that hails from Inza, a mountainous region where many major rivers of Colombia originate. With the high altitude and the surrounding volcanic features, farms from the Cauca region consistently produce great exemplars of specialty Colombian coffee. In the cup, we taste a clear malic sweetness rounded out with a balanced acidity, reminiscent of a crisp apple.

This lot was sourced by our friends at Royal NY, and is a blend of Caturra, Castillo, and Colombia varietals. Produced by various smallholders, the ripe cherries are harvested and delivered to the mill where it is washed and dried on raised beds.

Through the efforts of these multi-generational producers, this community has emphasized sustainable agriculture by leading local workshops on re-using waste, creating bio-fertilizer, and maintaining their commitment to using little to no chemicals in the farming process.
