our story

Sybil Coffee is a micro-roasting project based out of Queens, NY. This started from a deep passion for all things coffee, evolving from a personal interest into a desire to share these experiences more broadly. We hope you enjoy our carefully curated offerings!

our approach

We see coffee as a perfect representation of something that is fleeting, affected by time, location, and the input of producers/roasters/brewers along its journey from fruit to beverage. Our philosophy honors this by sourcing single-origin lots and roasting lightly without under-development, allowing for vibrant expressions of terroir, process, and varietal.

transparency and traceability

We strive to be transparent with our customers of the various costs and considerations that inform our purchasing decisions. Through this data, we hope that it provides a clear understanding of our pricing, as well as our commitment to ensuring that we work with importers who are equally dedicated to paying farmers well above market wage. We place emphasis on traceable lots as well, aiming to give customers a full picture of the farm's details, producer information, and general education regarding our coffees.
