Description

A fun Sidra from Juan Peña's Hacienda La Papaya! A cool counterpoint to Ecuador's other famed varietal (Mejorado), this Sidra is a more lush and silky experience, brimming with red fruit character. We taste red grapes, hibiscus, and black cherries, with a notably luscious mouthfeel. 

Hacienda La Papaya continues to demonstrate why it is one of Ecuador's most renowned coffee farms. Undergoing meticulous monitoring from planting to harvesting and processing, this coffee is washed and dried on raised beds for 9-18 days until reaching target moisture levels. 

Varietal

Similar to Mejorado, Sidra originated as part of a Nestle coffee plant breeding program in Ecuador. Also believed to a hybrid of Ethiopian heirloom and Bourbon, with dynamic fruit notes and a unique mouthfeel with some botanical / floral qualities as well.

Processing

Washed.

Hand-harvested at peak ripeness and floated for defects. Depulped and washed in spring water, before being dried for 9-18 days on raised beds until reaching moisture level of 9-11%
