Description

Juan Peña's washed mejorado is one of Ecuador's benchmark coffees, providing a clear picture of what this unique varietal has to offer. His farm, Hacienda La Papaya, is known for their meticulous processing standards and commitment to quality, and this is reflected in the consistency of their coffees year over year. In the cup, we get a profile that evokes baked fruit pastries, with white florals on the nose followed with key lime pie acidity and honeysuckle sweetness.

The cherries are hand harvested and undergo a 15-hour washed procedure, ensuring a very clean cup with minimal ferment notes.

Varietal

Despite its full name of "Typica Mejorado", this is not a Typica but rather a genetic hybrid that is descended from the Bourbon and Ethiopian Heirloom varietals. Primarily grown in Ecuador but exploding in popularity in recent times, this varietal usually features clean red citric notes and stone fruits, as well as a notable honeyed / marshmellow sweetness.

Washed.

Cherries are harvested by hand to ensure ripeness and depulped before undergoing a 15-hour controlled washing process in spring water.

The beans are then dried over 11 days in solar drying rooms equipped with humidity and temperature sensors, until reaching 10-12% moisture level.
