A very special lot from our partners at Osito! Placing 5th in the Copa de Oro competition for the Suaza region, this amazingly fragrant Pink Bourbon from Edimar Ortega evokes citrusy florals and ripe berries. We get bergamot, raspberries, and stone fruit sweetness in the cup.

Description

Presenting a very special offering from our partners at Osito, from their annual Copa de Oro competition! 

Placing 5th for the Central Region division, this washed Pink Bourbon from Edimar Ortega is a great example of why this varietal has been so well-represented in the region. The fragrance and flavors stood out immediately during our blind cuppings - in the cup, we get an intense aroma, with tasting notes of bergamot, raspberries, and stone fruit.  A very clean and dynamic flavor profile that changes character from hot to cool, well a well-integrated acidity to boot. 

Edimar runs Finca La Solita with help from his family, and has been growing coffee for 28 years. This Pink Bourbon is grown and harvested on 5 hectares of his 32 hectare farm. The processing for this lot is also very interesting. Per Osito, it is "semi-washed. Cherry is harvested when ripe, fermented intact for 45 hours, de-pulped, and lacto-fermented in plastic barrels, rinsed and dried on raised beds inside a parabolic greenhouse dryer for 12 days."

Varietal

Initially thought to be a natural hybrid of Red and Yellow Bourbon varieties, recent research has suggested that Pink Bourbon is actually an Ethiopian Landrace. The cherries are indeed a pink-ish hue, and can range from orange to slightly salmon colored.


This varietal has become a recent darling of specialty coffee due to its highly expressive and complex cups, featuring bright citrus fruit notes alongside floral sweetness. As such, the quality potential of this variety is endless when paired with producer skill, processing variations, and roast profiling.

Processing

Semi-Washed.

The cherry is harvested
when ripe and fermented intact for 45 hours. It is then
de-pulped, and lacto-fermented in plastic
barrels, before being rrinsed and dried on raised beds
inside a parabolic greenhouse dryer for 12
days.
